Ro*Tel is a U.S. based brand of canned diced tomatoes, which contain different levels of spice and chilies. Sara calls for the original version with diced tomatoes and green chilies. This doesn’t offer a lot of heat, so it would be a good choice for serving to children or those who don’t enjoy spice. If you prefer a spicier pasta, you could use another type of Ro*Tel tomatoes. Fresh diced tomatoes would be perfect in this pasta recipe along with some finely diced jalapeno.
