Summer Loaded Cauliflower Casserole
Casserole recipes are wonderful for any day of the week. Especially those days when you've been really busy, and you can't think of anything to make. Casserole recipes allow you just to put a bunch of ingredients into a casserole dish and then simply bake it in the oven. The results will be something that everyone in your family will love. Here is a great easy dinner idea for a loaded cauliflower casserole that is much like a loaded baked potato. The layers of cauliflower and cheese will be the perfect meal or side to any dish. Michaela from An Affair from the Heart created this casserole recipe to be like a loaded baked potato using cauliflower instead of the potato if you're trying to cut down on carbs. You could also make it with potato if you wanted to as well and it could be really yummy. You can still enjoy all of the flavours and other ingredients of a loaded baked potato without the potato. Cauliflower is a great substitute for potatoes, rice and other carbs since it doesn't have a lot of flavour to it, to begin with, and it tends to soak up the flavours of the ingredients added to it. Plus, it's really healthy too filled with vitamin C, vitamin K and vitamin B6. It is also a very good source of dietary fibre, omega-3 fatty acids, manganese, and biotin.
You can buy cauliflower organic or non-organic whichever you prefer. Since it's on the Clean Fifteen list from the Environmental Working Group it doesn't contain pesticides and chemicals even if it's non-organic, so you can save yourself some money from having to buy it organic. Now, since so many people are turning to cauliflower as a great substitute for carbs, you can also buy it already riced or minced up which saves you a lot of time. Ricing your cauliflower is easy if you have a ricer or you can even just take a sharp knife and chop the cauliflower into tiny little pieces. You can also run it through your food processor on pulse to chop it up into rice sized pieces. This way you can make fried rice dishes and stir fries with it instead of using regular rice which will add more nutrition and fibre to your diet. For this casserole recipe, you have to cut the cauliflower up into smaller pieces, but just bite-sized pieces and not tiny rice sized pieces. Then, you also add in some fried up bacon, sour cream, cheese and green onion. Of course, add salt and pepper as needed. You could also add in some other vegetables to make this casserole recipe even more healthy. You could use vegan cheese too if you wanted to keep the dairy out of the recipe.
A good way to make dairy-free vegan cheese is with cashews. You have to soak the cashews to soften them up and to make them easier to digest, and then you add some lemon juice and water to them and blend them up in your blender. What you'll be left with is a great version of a cheese sauce that tastes much like cheese without all of the fat and lactose that many people find hard to digest. There are also premade vegan cheeses out there too like Daiya which melt like real cheese. Or, you could use goat's cheese for a healthier option instead of cow's milk cheese.
