Roasted Stawberry Cheesecake Smoothie
Move over bacon and eggs, cereal, pancakes, waffles, and cinnamon toast; we’ve got the best breakfast recipe in town, and it’s this beautiful Roasted Strawberry Cheesecake Smoothie. With its thick, creamy lusciousness and concentrated strawberry flavour, it tastes just like having a decadent dessert – for breakfast. But it’s actually quite healthy and can give you that extra energy boost you need in the morning when you’re preparing for a busy day. This recipe makes two strawberry smoothies, takes only 20 minutes to prep, 15 minutes to cook, and 35 minutes – total – to make. If you’re running out of time, you can even skip the roasting part and simply use fresh strawberries.
Ever wonder what the nutritional content of strawberries is? They’re very high in vitamin C, dietary fiber, and manganese; they’re also high in potassium and iron, and they contain iron and calcium as well. Greek yogurt, as this strawberry smoothie recipe calls for, is very high in calcium and protein. One of the best features of this breakfast smoothie recipe is that it’s sweetened with agave nectar and you can add as much, or as little, as you like. You can also opt out of the cream cheese ingredient and just use Greek yogurt if you like. If you are vegan or cannot consume dairy products, there are several different substitutes you can use for the yogurt. One idea is to make your own dairy-free whipped cream. To do this, simply purchase a single can of coconut cream and let it sit in the refrigerator for several hours. Once it is fully chilled, open the can and remove the heavy coconut cream part, leaving the coconut water – which you can drink later, or use in another recipe. Get out your favourite all-natural sweetener, like maple syrup, if you’re vegan, or honey, if you’re not. Add the sweetener sparingly until it suits your taste, and then whip the mixture up using a mechanical eggbeater; you’ll see it’s exactly the same consistency as whipped cream or Greek yogurt, and it tastes just as delicious, if not even more so.
This smoothie breakfast recipe can also serve as a bona fide strawberry cheesecake dessert recipe – simply chill the bottom later in the freezer for approximately twenty to thirty minutes before adding the cheesecake topping. Serve the whole thing in a fancy parfait dish instead of a glass, sprinkle graham cracker crumbs on top, and garnish with strawberry slivers.
