Pinapple Cake From Scratch is a Tropical Dream come true!
Enjoy a little taste of the tropics with this yummy Pineapple Cake. With the great easy cake recipe from Jaclyn of Cooking Classy, you'll be able to make this entire cake from scratch. What you'll be left with is a dense yet moist cake with a decadent vanilla buttercream icing. As with any pineapple dessert, or tropical dessert, you can't forget the shredded coconut on top either. One of the key ingredients in this cake recipe Jaclyn created is the pineapple juice concentrate. You need the concentrate for the intense pineapple flavour in this recipe otherwise you just won't get the flavour you may want. So don't use the juice from the can as it doesn't have enough flavour in it, buy a separate container of pineapple juice from concentrate and use that instead. You also don't want the pieces of pineapple to be too large in the cake either. So make sure you chop them up really finely and drain out all of the juice. You could try using fresh or frozen pineapple with this recipe too if you wanted. Just be sure to cut it in tiny pieces just as you would with the canned fruit. Pineapple is also one of the fruits on the Clean Fifteen list from the Environmental Working Group which means you can buy it organic since it doesn't have any traces of pesticides on it.
To make things even fancier, Jaclyn shows us how to make a little pineapple garnish for the top of the cake out of dried pineapple slices. You simply slice the pineapple in thin slices and dehydrate it in the oven at a low temperature. If you happen to have a food dehydrator, you could also use that too, and it's a good way to preserve your fresh fruit too. The buttercream frosting can also be used for other cake recipes too and you can even add flavouring to it or colour if you like. Just add some cocoa to it to make a chocolate frosting or some strawberry flavouring or puree to make a strawberry flavoured frosting.
