Another great thing about this salad recipe is that it won't take a lot of time to make. You can either make it the day you want to eat it, or you could make it the day before and have it ready to go in the fridge the day you want it. The prep time for the recipe is only 10 minutes, and so is the cooking time. You will also need some time for the noodles to cool since a warm pasta salad is never a good idea. You will need a total of 2 cups of macaroni elbow noodles, mayonnaise, sour cream, olive oil, mustard, salt, pepper, lemon juice, bacon or bacon, an avocado, green onions, cherry tomatoes, basil and pickles. They used a spicy mixture of pickles and peppers for this recipe, but you could also use just plain old regular pickles too if you want. When you're making pasta for pasta salad recipes, make sure you only cook the pasta until it's just slightly undercooked. If you overcook your pasta, it tends to fall apart when you make the salad. Plus, if you allow the pasta salad to marinate for a few hours before you eat it, the noodles will also absorb the extra moisture. When you drain the pasta, it's also best not to rinse it, and just dump it onto a baking sheet with a rim around the edge to cool. You can even put it in the fridge for a little bit if you want. Just never mix the pasta with butter because it will harden when it cools.
If you are gluten intolerant or someone you are serving this salad is, you can use a gluten-free macaroni pasta like a rice pasta or a quinoa pasta. They taste just as great as regular pasta noodles, and most people won't even be able to tell the difference. To make this recipe vegan you can skip using the bacon and instead add some seeds or nuts to the recipe. You can also substitute the sour cream for some vegan sour cream and the mayonnaise for some vegan mayonnaise instead. If you still eat dairy but just want a healthier option use mayonnaise with olive oil and use Greek yogurt instead of regular yogurt. It will be just as creamy and delicious as if you were to use any other yogurt, maybe even better. Serve the salad recipe cold for the best flavour and store in the fridge.
