Creamy Strawberry Shortcake NO BAKE dessert
Are you looking for a fresh, light and easy dessert? Anything with strawberry in it will be a good choice. So this easy no bake strawberry shortcake dessert recipe will be the perfect treat. You get layers of crushed cookie with juicy, sweet strawberries and creamy pudding and whipped cream for a truly irresistible dessert. This recipe would be perfect for both beginner bakers and seasoned bakers alike, and since it's a no bake treat, you could also let older kids make it themselves. This strawberry dessert recipe is called many different names, it could be called a strawberry dessert lasagna, a no bake lush, a no bake strawberry cheesecake or a no bake layered dessert. Most recipes that go by these names have a few things in common including using cookies as the crust with a fruity and creamy filling. For this recipe, Dorothy from Crazy For Crust used Golden Oreos and strawberries with some vanilla pudding and whipped cream. Usually, a shortcake will have a white sponge cake as the base for the recipe, but this one uses the Golden Oreos in place of the cake making the recipe even easier. You could always try the sponge cake in place of the Golden Oreos though to see which you would prefer.
If you or someone in your household is gluten sensitive or intolerant to gluten, there are actually some great vanilla Oreo substitutes that are gluten-free. They are from a company called Kinnikinnick, and they are called KinniToos Chocolate Vanilla Sandwich Creme Cookies. They also have the classic chocolate KinniToos as well. They taste just as good as the real deal too. These gluten-free cookies would be perfect to use in easy desserts, and no bake treats like this. To crush up any type of cookies to use in any dessert recipe you can just put them in a large ziplock bag, seal it and then take a rolling pin and roll it over the cookies using good pressure. You can also use a glass or a flat pan or plate if you don't have a rolling pin. You can also put them in your food processor if you have one, but for those who don't using a bag and a rolling pin works great too. Just make sure you get them broken into really small pieces.
Then, you simply make your own instant vanilla pudding which is very easy to do. You just buy the mix at the store, and you're good to go. You could also try making your own using healthy ingredients like tofu, maple syrup, salt, almond milk, arrowroot powder and vanilla extract. This would be a great vegan gluten free option, and there are some recipes online that you can follow to make it. If you don't like tofu, you can also use tapioca starch as a thickening agent as well. You could also still use the packaged instant pudding but find a sugar-free version for less sugar. Dorothy also recommends that you could even try using a lemon or cheesecake flavour. You also mix in some whipped topping like Cool Whip into the pudding so for a vegan option you could use a coconut cream whipped topping. So Delicious makes a great one. For the strawberries in this recipe, you'll want to make sure that you purchase them organic since they are at the top of the Dirty Dozen list from the Environmental Working Group (EWG). Buying the fruits and vegetables found on the Dirty Dozen list organic will prevent you from consuming the traces of pesticides that are often found on produce. Enjoy this delicious and easy recipe and try others from Dorothy's collection.***
