This Christmas tree cookie recipe is a festive choice for the holiday season. Like other holiday cookie recipes, these are sweet and buttery with a Christmassy twist. The quick icing recipe for these cookies is an easy mixture of icing sugar and milk. A traditional way of decorating cookies during the holiday season is to flood the tops with loosened royal icing, but the process of decorating these cookies is far easier; you merely dip the cookies in the frosting and pipe a rim around the edges. The icing is flavored with almond extract, but if you aren’t a fan, you could substitute with some vanilla instead. 1 1/2 cups confectioners' sugar
1 cup butter, at room temperature
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 cup confectioners' sugar
2 teaspoons milk
2 teaspoons light corn syrup
1/4 teaspoon almond extract

Piped colored frosting
In a large mixing bowl, use an electric mixer to Mix confectioners' sugar, butter, egg, vanilla, and almond extract.
In another bowl, mix the flour, baking soda, and cream of tartar together.
Add the dry ingredients to the wet and mix in until combined.
Cover the bowl with plastic wrap. Place into the refrigerator and cool for 2 hours.
Preheat the oven to 375F.
Line one or two baking sheets with parchment paper.
Remove the dough from the refrigerator and divide into two halves.
On lightly floured cloth-covered board, roll each half out to 3/16 inch thick. Cut into Christmas tree shapes.
Place onto the prepared cookie sheets.
Bake one sheet of cookies at a time on the middle rack for 7 to 8 minutes.

In a mixing bowl, stir together confectioners' sugar and milk until smooth. Use an electric mixer to beat in the corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.

Use piping tools for garnishing.
