Chicken Salad Melt Sandwich

Some of the best sandwich recipes happen by accident and experimenting with different sandwich recipes and combinations can be really fun. Instead of just doing things the same old way, you can make new good sandwiches out of some interesting ingredients. So instead of just having your typical egg salad sandwich recipe add a little bit of curry to the recipe for a lot of extra flavour and colour. Or in your tuna salad add some shredded cheese or some relish to add some new flavour to it. Leftover rotisserie chicken can also be a great base for the best sandwich recipes. You can make chicken salad out of shredded up rotisserie chicken and then add some extra ingredients to spice it up a little bit. So instead of the tuna, you'll use chicken, but pretty much everything else will stay the same in the recipe. Having a rotisserie chicken is a great idea because you can use it throughout the week for good sandwiches like this and in other recipes involving chicken.

Buy a pre-made rotisserie chicken at the start of the week to have a nice, easy dinner. Serve it with some salad and potatoes or some steamed vegetables and rice. Then take all of the meat off of the bones and put the chicken bones into a pot with water to make some chicken broth. Cover the bones with water and add some apple cider vinegar to the mix to pull all of the nutrients out of the chicken bones and then leave it to simmer for 8 hours. You can also add some vegetables like carrots and cabbage as well as some greens and garlic for some flavour and added nutrients. Once you have your broth, you can store it in jars or containers and have it on hand to have as a soup base, sauce base or to drink on its own. If you don't want to buy the pre-roasted chickens from the grocery store, find an organic pasture-raised chicken to roast at home yourself. You can add herbs like thyme, sage, rosemary and parsley with some salt and cayenne pepper to give it some flavour, as well as some lemon and garlic too.

Besides the chicken, for this sandwich recipe, you will also need some bread which can be regular bread, artisanal bread or even gluten-free bread. Then you will also need all of the ingredients to make chicken salad the way you like it. Most people use mayonnaise in their chicken salad recipe as well as some dijon mustard and some salt and pepper. For the chicken sandwich melt, you'll also need the cheese of course. Use whatever cheese you like or that you have on hand. A white cheese like mozzarella would be great or even a provolone. Make sure you shred the cheese though since it will melt more evenly on the sandwich than if it's in a slice. To make the bread nice and crispy a good tip is to fry it on both sides first in a pan with some butter on it and then make your sandwich melt in the oven under the broiler.
